Start off by making your simple syrup. In a saucepan combine sugar, water and cinnamon stick. Bring to a boil, stirring until all sugar has dissolved. Carefully remove cinnamon stick and leave to cool.
Add whisky, lemon juice, 1/2 oz of cinnamon syrup and egg white to a shaker tin filled with ice. Shake, vigorously, until very cold. Seriously, shake the hell outta this cocktail so that the egg whites emulsify.
Pour cocktail through a strainer into a chilled glass. Add a few dashed of bitters on top (feel free to make 'em pretty), garnish with an orange peel and serve. Or enjoy.
